This Metro HotBlox holding cabinet features hybrid convection-radiant heating technology so you can create the perfect environment for both moist and crispy food! It lets you hold food at any temperature between 90 and 190 degrees Fahrenheit with full temperature control. This unit’s aluminum cabinets are insulated with high-density fiberglass to ensure optimum heat retention. Its field-reversible, solid doors have welded corners for added durability and are also insulated with 1″ thick high-density fiberglass for maximum energy conservation. Each of the double-hinged doors also has a 180-degree swing, an adjustable air intake vent, a chrome-plated, high-strength magnetic latch with lever release, and removable, high-temperature santoprene gaskets.

This unit features analog controls with master on / off switches and electro-mechanical thermostats with always-on thermometers. For maximum efficiency, it features two independently controlled cabinets stacked on top of each other, creating a full size, dual cavity design. Thanks to its thermostatically controlled, forced convection and built-in vent system, humidity is released while dry air is drawn in to keep food crispy. For moist foods, a pan of water can be placed on the floor of each cabinet to create optimal humidity from the radiant element.

Included with this unit are fixed wire slides which are made of nickel chrome-plated wire with 2 3/4″ spacing. This wide holding cabinet accommodates up to (8) 12″ x 20″ x 2 1/2″ full size steam / hotel pans, (8) 18″ x 26″ sheet / bun pans, or (16) 13″ x 18″ sheet / bun pans (all sold separately) per cavity. Equipped with (4) 5″ neoprene casters and built-in handles, it transports easily. Each cabinet comes with a 6′ cord with a plug and operates at 120V with an output of 875W.
