This Doyon KDPR21 V01 two section roll-in proofer / retarder is designed to handle any size bakery operation with ease. This unit has a dual purpose, allowing it to proof and retard within one unit. It features a 10″ touchscreen with programmable recipes that allows it to retard overnight and schedule a proofing time. This unit has a durable fully insulated stainless steel interior and exterior, which is easy to clean and maintain. It delivers even airflow, humidity distribution, and continuous 24/7 operation. Plus, it features an automatic water fill system so you don’t have to hassle with labor intensive water pans.

This unit is designed for maximum versatility and efficiency. It has a proofing temperature range up to 110 degrees Fahrenheit with relative humidity up to 95%. The two proofing cavities allow for two racks (sold separately) of products to be easily rolled in, eliminating the hassle of individually loading and unloading pans. This unit also has a modular design and easy locking mechanism for on-site assembly. It requires a 208V electrical connection. A site inspection will be scheduled and initiated by the manufacturer to ensure your space meets all electrical, clearance, and installation requirements before delivery.
