Hold and proof in one convenient unit with this Metro C539-CDC-U C5 3 Series holding and proofing cabinet.
Space is a valuable commodity in any kitchen, and with this holding cabinet, you get all the benefits of a holding cabinet and a proofing cabinet in a single unit! Thanks to its combination heating / proofing module, this full height cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch, and manage the moisture level at low temperatures. Additionally, its Dutch door design allows you to conserve energy by only opening the portions you need to.

Spacious Interior
This cabinet comes with universal wire pan slides that are adjustable in 1 1/2″ increments. The interior of this cabinet can accommodate up to (17) full size sheet pans, or (32) full size food pans.
Insulated Frame
The patented “Insulation Armor” technology on this cabinet retains heat, saves energy, and provides a cool-to-touch exterior. It comes in a red color.
Durable Construction
Its durable polymer construction is also dent, impact, and stain resistant, and molded-in hand holds create vertical handles for mobile applications.
Innovative Controls
This cabinet features independent analog controls that allow you to set the temperature (80 to 200 degrees Fahrenheit) and humidity level inside the cabinet, ensuring that you can create optimal conditions for holding and proofing. Because this unit also features a combination module control, you can control the humidity at low temperatures inside the cabinet. And should you need to service the controls, the entire module pulls out for easy access and faster, cheaper service calls.
Clear Dutch Doors
Two insulated, clear Dutch doors provide an excellent view of the interior and save energy by limiting the amount of air escaping the cabinet.

This cabinet comes with a set of 5″ neoprene donut casters (two with brakes) to make mobility easy for service and cleaning.
