This Metro HotBlox Xpress Quick-Pick large countertop holding cabinet features hybrid convection-radiant heating technology so you can create the perfect environment for both moist and crispy food! This compact, efficient unit is designed for high-volume kitchens and is suitable for hot food display and self-serve applications. Thanks to its shallow depth, this unit is perfect for use in areas where space is limited, allowing for more useable counter space. The cabinet is made of aluminum and is insulated with high-density fiberglass to ensure optimum heat retention and energy conservation. Equipped with polycarbonate, quick-flip doors, one opens upward and the other opens downward, staying open at 120 and 170 degrees without additional support. The doors are field configurable to open up or down and feature removable santoprene gaskets.

This unit lets you hold food at any temperature between 90 and 190 degrees Fahrenheit with full temperature control. It features user-friendly touchscreen controls with a master on / off switch. It provides valuable feedback including relative humidity levels, and the unit is equipped with menu presets, programmable timers, and a USB port with built-in HACCP data logging. Thanks to its thermostatically controlled, hybrid convection-radiant heating and built-in vent system, humidity is released while dry air is drawn in to keep food crispy. For moist foods, a pan of water can be placed on the floor of the unit to create optimal humidity from the radiant element. The innovative pass-through design allows it to be placed between your kitchen and serving area, as products can be easily accessed from both sides.

Included with this unit are 4 wire shelves which are made of nickel chrome-plated wire that can be installed flat or slanted in 2 different angles. The interior of this unit is illuminated by LED lighting, which makes it easy to identify and organize your food pans. It accommodates up to (4) 12″ x 20″ x 2 1/2″ full-size steam / hotel pans, (4) 13″ x 18″ half-size sheet pans, or (12) 1/3 size pans (sold separately). Additional shelves can be added to the cabinet to maximize the holding capacity (sold separately). This holding unit can be stacked with other units (sold separately), comes with a 6′ long cord with a NEMA 5-15P plug, and operates at 120V with an output of 875W.
