It is made with commercial-grade refractory cement that stands up to high heat, and it is reinforced with stainless steel fibers to provide structural integrity and longevity.
Since this model can cook with either wood or liquid propane, you can choose your fuel type based on your business needs and your setting! Its signature FlameRoll effect delivers a consistent flame that can heat the cooking surface up to 1,000 degrees Fahrenheit. It has a two-burner system for versatile cooking, including a 36,000 BTU infrared burner that’s perfect for searing meats and an 18,000 BTU ambient burner to help you achieve more indirect heat. With simple on/off switches for both burners and a temperature control knob for the infrared burner, the control panel makes start-up quick and simple. For wood-fired operation, wood can be loaded into the front of the oven, allowing you to infuse pizzas, meats, and vegetables with the flavors of smoky wood.
A modern, efficient flue system provides an outlet for excess smoke to safely escape far from the oven’s door. The unit’s large 38″ x 28″ cooking surface allows you to cook a variety of dishes in a single oven.
